The combination of tomato sauce and orange marmalade makes an almost instant barbecue sauce for this cheese-topped broiled chicken.
Ingredients
1/2 cup tomato sauce
1/2 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon pepper
4 small skinless, boneless chicken breast halves (4 ounces each)
2 tablespoons orange marmalade
1/4 cup crumbled feta cheese (1 ounce)
Directions
1 Preheat the broiler. In a small bowl, stir together 1/4 cup of the tomato sauce, the oregano, salt, and pepper.
2 Place the chicken on a broiler pan. Brush half of the tomato mixture over the chicken breasts. Broil 4 to 6 inches from the heat for 3 minutes. Turn the chicken over, brush with the remaining tomato mixture, and broil 3 to 4 minutes or until the chicken is cooked through.
3 Meanwhile, in a small bowl, stir together the remaining 1/4 cup tomato sauce and the orange marmalade.
4 Spoon the tomato-orange marmalade mixture over the chicken and sprinkle the feta on top. Broil until the feta has melted, about 1 minute. Makes 4 servings
