Studies suggest that apple skins have cancer-fighting properties

2 Tbsp olive oil
1 head cauliflower, cut into large florets
1 Tbsp ground coriander
1 1/2 tsp ground cumin
1/2 tsp ground turmeric
1/8 tsp cayenne pepper
1/2 tsp ground ginger
1/2 tsp salt
3 Jonathan apples, cored and cubed
1 tsp freshly squeezed lemon juice
1/2 cup chopped fresh cilantro
- Heat olive oil in a large skillet over medium heat. Cook cauliflower, stirring frequently, 5 minutes or until it begins to soften. Stir in coriander, cumin, turmeric, cayenne pepper, ginger and salt and cook 2 minutes or until cauliflower just begins to brown and spices are fragrant. Add 1/2 cup water and simmer 10 minutes or until cauliflower is just tender.
- Add apples 2 minutes before serving. Garnish with cilantro.
