Granola Strawberry Parfait Image

Makes 4 parfaits

Ingredients:
1 1/2 cups oats
1/3 cup slivered almonds
3 Tbsp raw wheat germ
2 Tbsp shelled sunflower seeds, unsalted
2 tsp ground cinnamon
2 Tbsp natural unsweetened apple butter
2 Tbsp acacia or other mild floral honey
2 6-ounce containers strawberry or vanilla yogurt
1 1/3 cups fresh strawberries

Directions:

  1. Preheat oven to 325° F.
  2. In a medium bowl, stir together oats, almonds, wheat germ, sunflower seeds and cinnamon.
  3. In a small bowl, stir together apple butter and honey. Add to oat mixture and stir until thoroughly combined.
  4. Spread the mixture evenly on a large baking pan. Bake for 25 minutes or until toasted and nearly crisp, stirring occasionally. Remove from the oven and let cool slightly.
  5. Layer the granola, yogurt and berries into parfait, wine or other large beverage glasses.

Per Serving 350 calories, 10 g protein, 57 g carbohydrates, 8 g fiber, 26 g sugar, 10 g fat, 1 g saturated fat, 0 mg cholesterol, 15 mg sodium

Helpful Hint: Anything goes when it comes to berries. Use the type you like best or make a mixture!
