Makes 4 parfaits
1 1/2 cups oats
1/3 cup slivered almonds
3 Tbsp raw wheat germ
2 Tbsp shelled sunflower seeds, unsalted
2 tsp ground cinnamon
2 Tbsp natural unsweetened apple butter
2 Tbsp acacia or other mild floral honey
2 6-ounce containers strawberry or vanilla yogurt
1 1/3 cups fresh strawberries
- Preheat oven to 325° F.
- In a medium bowl, stir together oats, almonds, wheat germ, sunflower seeds and cinnamon.
- In a small bowl, stir together apple butter and honey. Add to oat mixture and stir until thoroughly combined.
- Spread the mixture evenly on a large baking pan. Bake for 25 minutes or until toasted and nearly crisp, stirring occasionally. Remove from the oven and let cool slightly.
- Layer the granola, yogurt and berries into parfait, wine or other large beverage glasses.
Per Serving 350 calories, 10 g protein, 57 g carbohydrates, 8 g fiber, 26 g sugar, 10 g fat, 1 g saturated fat, 0 mg cholesterol, 15 mg sodium
Helpful Hint: Anything goes when it comes to berries. Use the type you like best or make a mixture!
