This quick and easy Chocolate-Coconut Popcorn recipe makes a fabulous treat.

Time: 10 minutes

Serves: 4

Popcorn is packed with fiber; research also suggests an ounce or two of dark chocolate per week can lower heart-attack risk in those who are generally healthy. Combine the two, add a splash of coconut milk and, voila!, you have delicious chocolate-coconut popcorn. Here's the recipe:


2 Tablespoon canola oil
½ cup popcorn
2 Tablespoon dark chocolate chips
2 Tablespoon light coconut milk


Place oil and corn in a stovetop popcorn maker over medium heat, turning a couple of times to distribute evenly. When first kernels begin to pop (after about 4 minutes), turn the handle continuously until there's 5 seconds of silence between pops. In a microwave oven, melt chips on 80 percent heat for 1 minute, then whisk with coconut milk and toss with popcorn to coat.
