This easy chili recipe—from Ruthi Solari, clinical nutritionist and founder of SuperFood Drive, a non-profit organization committed to improving the health of the hungry—is filled with nutritional value, affordable to make, and can be ready in 30 minutes! Eating healthy can be delicious and is possible—even on a budget!


1 tablespoon chili powder
1 can whole peeled tomatoes with liquid, chopped
2–3 cans of beans your choice: kidney, pinto, black, garbanzo
1 can whole kernel corn, undrained
1 tablespoon ground cumin
1 1/2 teaspoons dried oregano
1 1/2 teaspoons dried basil


  1. Heat tomatoes, kidney beans, black beans, corn and chili powder in a large pot.
  2. Season with cumin, oregano and basil. Add water if chili seems too thick.
  3. Bring to a boil, and reduce heat to medium. Cover, and simmer for 20 minutes, stirring occasionally.

Optional: The possibilities are endless. To give this delicious chili even more flavor and nutrition add green chilies or your favorite canned or fresh vegetables (e.g., carrots, onions, celery, green or red bell peppers)
