Ingredients

  • 2 cups whole-wheat flour
  • 1 cup flaxseed flour
  • 2 tsp baking soda
  • 2 tsp salt
  • 2 tsp ground cinnamon
  • 1 1/4 cup nonfat milk
  • 1 cup canola oil
  • 1 cup Splenda granulated sweetener
  • 1/2 cup brown sugar
  • 4 cups uncooked oatmeal
  • 2 eggs, lightly beaten
  • 2 tsp vanilla extract
  • 1 cup raisins

Directions

  1. Heat oven to 350˚F.
  2. Combine flours, baking soda, salt and cinnamon in a bowl. Set aside.
  3. Mix milk, oil, Splenda, brown sugar, oatmeal, eggs and vanilla in a large bowl.
  4. Add dry mixture a little at a time, stirring to combine, then add raisins and mix gently until distributed throughout.
  5. Drop 1 heaping Tbsp of batter at a time on baking sheets, lightly flatten with a spoon and bake 10 to 15 minutes or until cookies are firm.
