3/4 teaspoon unflavored gelatin
2 tablespoons water
3/4 cup carrot juice
3 tablespoons orange juice
4 teaspoons white wine vinegar
1/4 teaspoon salt
1/8 teaspoon cayenne pepper


1 In a small heatproof bowl, sprinkle the gelatin over the water and let stand until the gelatin has softened, about 2 minutes. Place the bowl in a pan of simmering water and heat until the gelatin has dissolved, about 2 minutes. Remove from the pan and let the gelatin cool to room temperature.

2 In a small bowl, or a jar with a tight-fitting lid, combine the cooled gelatin, the carrot juice, orange juice, vinegar, salt, and cayenne. Whisk or shake to combine. Refrigerate for about 1 hour or until slightly syrupy.

3 Store in the refrigerator, but bring back to room temperature before using or the dressing will be too thick. Makes 1 cup
