2 teaspoons cornstarch
1/4 cup water
1/2 cup balsamic vinegar
2 shallots, minced (1/4 cup) or minced whites of 2 scallions
4 teaspoons Dijon mustard
1 tablespoon honey
1 In a small saucepan, whisk together the cornstarch and water until smooth. Bring to a boil over medium heat and cook until thickened, about 1 minute.
2 Off the heat, whisk in the vinegar, shallots, mustard, and honey until smooth. Let cool to room temperature and refrigerate. Makes 1 cup
