3/4 cup unsweetened pineapple juice
1/4 cup fresh lime juice
1/4 cup sugar
1 1/2 teaspoons tarragon
3/4 teaspoon salt
1/4 teaspoon cayenne pepper
1 tablespoon granulated fruit pectin


1 In a small saucepan, combine the pineapple juice, lime juice, sugar, tarragon, salt, and cayenne. Bring to a boil over medium heat.

2 Stir in the pectin, return to a boil, and cook, stirring constantly, for 1 minute. Let cool to room temperature and refrigerate. Makes 1 cup
